Ingredients

  • 2 eggs, beaten
  • 2 cups plain nonfat Greek yogurt
  • 2 cups white whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsweetened applesauce

Directions

  1. Preheat waffle iron. Spray well with nonstick cooking spray.
  2. In a large bowl, whisk the eggs and yogurt.
  3. In a separate bowl, combine the flour, baking powder, baking soda, and salt.
  4. Stir the dry ingredients into the wet ingredients.
  5. Add the applesauce, mixing until just blended.
  6. Pour the batter into the preheated waffle iron. Cook according to the waffle iron
    directions. Between each waffle, coat the iron with additional cooking spray
    between if needed.
